Place blueberries in a blender. Puree until smooth and even.
Add coconut oil into a small dish and place it in the microwave on high for 30 second intervals and stir in between. There's no need for the coconut oil to be hot - you just need it to be liquid.
Add the coconut oil to the pureed blueberries and blend again just until mixed.
If your blueberries are cold, this may cause the coconut oil to immediately seize and solidify. If this happens, microwave the mixture for a few seconds at a time, until the coconut oil is liquid again.
Next add the gelatin to the mixture and blend until mixed. If your blueberries weren’t very juicy, the mixture may be thicker than you will want it. You can add a small amount of water, up to a tablespoon of warm water until your mixture is the texture of batter.
Place the silicone mold on a flat surface. Even better you can place the mold on a flat tray that can be transferred to the fridge.
Fill the mold with the blueberry and coconut oil mixture. I use an injector tool to more easily fill the molds, but if you don’t have one, simply pouring the liquid or spooning it into the mold will work too.
Place in the refrigerator for at least 1 hour or overnight.
Pop the treats out of the tray to serve!
