First, slice the watermelon across its shorter side to make 1 inch slices.
Lay the slices flat and use the cookie cutter to punch into just the pink flesh.
Remove the cookie cutter and use a knife to remove any excess watermelon that mis-shapes the Easter Bunny.
To add the bunny tail, do either of these: 1. Use a tiny amount of icing to attach the mini marshmallow tail. Give it a few minutes or even a few hours to set.
Or 2. Break tiny pieces of toothpicks with your hands and poke one end into the mini marshmallow and the other end into the watermelon.
Then using a twisting motion poke the a skewer from the bottom of the bunny up through the top of the bunny head without poking the skewer through the top.
And serve!
To store the bunnies remove the mini marshmallow tail and place the watermelon in the fridge for up to a few days. Then add a fresh marshmallow tail when you are ready to serve.
