Are you feeling lucky? ☘️
Because these Lucky Charms Marshmallow Crispy Treats are so much fun to make and totally delicious! It’s such a fun spin on traditional Rice Crispy Treats. Some of my favorite Marshmallow Treats aren’t ones that you would expect. I love Honeycomb Marshmallow Crispy Treats because the texture is so light and crunchy. And I love Cookie Crisp Marshmallow Crispy Treats because of that little hint of chocolate.
My favorite part about these Lucky Charms Marshmallow Crispy Treats is that you get double marshmallows!
Supplies & Ingredients to Make Lucky Charms Marshmallow Crispy Treats
Marshmallow treats are easy to make and don’t require any baking. That’s why they’re my favorite. But you do need to use a stovetop, and a stock pot. A cast iron ceramic like mine, is a nice way to go, but not necessary. Any stock pot will do. Additionally you will want a 13×9 inch pan, a mixing bowl and a large wooden spoon.
The ingredients are simple! All you need is 1 box of Lucky Charms Cereal – at least 10 cups, 1 bag of mini marshmallows, and 1/4 cup of butter. Your butter can be salted or unsalted. And if you want to give your cereal bars just an extra pop of flavor include vanilla extract in your ingredients too!
Melting Your Butter & Marshmallows
Whatever you do, don’t rush this process. Start by melting your butter on low. Give it a stir every minute or two to help the butter melt faster, but don’t turn the heat up because it can burn. Brown butter is delicious, but not for this recipe.
Once your butter is completely melted, add your marshmallows.
Because mini marshmallows have an unusual shape, measuring can be tricky. As long as it’s around 1 10 ounce bag, that’s all you need! Measuring the cereal is a lot easier than measuring the marshmallows.
While you are melting your marshmallows, keep your heat on low. Before you begin to stir your butter and marshmallows together, spray your mixing spoon thoroughly and heavily with non-stick spray. You won’t regret it!
Work Quickly
Once your marshmallows are melted, add a dash of vanilla extract. It’s not necessary, but it’s so delicious!
From this point on, you need to work quickly. Your marshmallows will begin to set fast. If you mix the cereal into the pot in which you heated the butter, it can heat the cereal and soften it slightly. You may lose that delicious crunch.
If you work in a mixing bowl, the marshmallows will set faster. So be ready! Thoroughly spray the mixing bowl with non-stick spray and have your Lucky Charms Cereal measured and in the bowl before you add your butter and marshmallow mixture.
You may even want to spray your mixing spoon with non-stick spray again! Once you add the marshmallows and butter to your cereal, stir the ingredients together as quickly as you can. Once they are evenly coated, spread the Lucky Charms Marshmallow Crispy Treats into a coated pan.
Spread the Lucky Charms Marshmallow Crispy Treats into a Coated Pan
Are you seeing a theme? Because yes, your 13 x 9 inch pan should also be coated with non-stick spray. Marshmallows are sticky!
Spread the marshmallow treats across the pan as evenly as you can. They will still be uneven until you try this little trick…
Cut a large piece of wax paper and coat it with non-stick spray. Then use the paper to press the Lucky Charms Marshmallow Crispy Treats into the pan to even the surface and make them look super pretty. Don’t push them hard enough to break the marshmallows!
Cut your Lucky Charms Marshmallow Crispy Treats into Squares
Before you cut your marshmallow cereal squares – let the marshmallows set thoroughly and completely. This will take 4+ hours. Overnight is great too.
That means you may want to make your Lucky Charms Marshmallow Crispy Treats ahead of time. Since they keep well, and they make a great daytime snack, this shouldn’t be a problem.
To cut the treats, just use a sharp knife. If you find that your treats are not cutting evenly, it likely means the treats need to set for longer. So let them rest and try cutting them again later.
How to Store Lucky Charms Marshmallow Crispy Treats
You can store your Lucky Charms Marshmallow Crispy Treats in the 13×9 pan by just covering the treats with aluminum foil. Or once they are cut, store them in an air-tight container.
There’s no need to refrigerate. They are perfectly fine at room temperature.
Marshmallow cereal treats stay good for longer than a lot of other desserts. I can’t imagine that you will have any left by the time the cereal starts to get soft! But I would suggest that you eat them within 3-5 days.
