Move over Unicorn Recipes! It’s glitter princess time. These Rainbow Glitter Sugar Cookies will add a bit of sparkle that will liven up any table! It’s a tasty delicious dessert that’s so much fun because it uses Edible Glitter!
If you haven’t tried Edible Glitter before, it’s an absolute must. It works best as a garnish but it truly has a light catching iridescent sparkle that is totally magical. It comes in lots of different colors and here are a few of my favorites.
As a recipe, these Rainbow Glitter Sugar Cookies are very simple. It’s a great recipe if you are starting as a baker. The only ingredient that is out of the ordinary is Cream of Tartar. This ingredient is standard for sugar cookies but not commonly used. But the good news is you can find it anywhere!
The trick to making great Rainbow Glitter Sugar Cookies is using high quality ingredients. Sugar cookies are such a simple cookie that quality will make all the difference. I recommend using a French or European Butter.
If you want to go all out, using a handmade Vanilla Extract is nice too.
With any cookies, the wet ingredients blend together first. Then add the smaller dry ingredients like cream of tartar, baking soda, and salt. Add your flour last. The idea of blending all your dry ingredients in a separate bowl is so odd! Please ignore that next time you see it in a recipe.
Another trick to making great cookies is to not overmix the dough! When you overmix dough, your cookies won’t expand. The texture is much more dry and they are not as pretty. With cookie dough, you only need to blend until the ingredients are mixed, but nothing more.
Oh, and ALWAYS take time to taste the cookie dough! YUM!
Now it’s time to sparkle! Add your edible glitter to a small bowl. Scoop your cookies into a ball and then roll the dough in the edible glitter so that the entire surface is covered.
It’s even more fun if you can use a few different colors of edible glitter! I used rainbow, silver, gold, and galaxy!
They were so pretty I didn’t even want to put my Rainbow Glitter Sugar Cookies in the oven!
Bake them in the oven at 350° for around 10 minutes. With any cookie, look for golden brown edges to know when they are done.

Rainbow Glitter Sugar Cookies
Ingredients
- 1/2 cup White Sugar
- 2 tablespoons White Sugar
- 1/2 cup Unsalted Butter
- 2 Egg Yolks
- 1 tablespoon Vanilla Extract
- 1/4 teaspoon Cream of Tartar
- 1/2 teaspoon Baking Soda
- Pinch Salt
- 1 1/4 cup All Purpose Flour
- Edible Glitter
Instructions
- Preheat oven to 350 degrees F and place parchment paper on a cookie sheet.
- Cream together sugar and butter. Beat in the egg yolk and vanilla until thoroughly mixed.
- Gently blend your cream of tartar, baking soda and salt.
- Gently mix in half of your flour. Then mix in the other half. Be careful not to overblend.
- Scoop into 1 inch dough balls and roll in edible glitter, covering them entirely.
- Space them several inches apart on your cookie sheet and bake for around 20 minutes or until the edges are golden brown.
