Sometimes you just need a fix of deep, dark, rich chocolate! And these brownie cookies are a great way to have something that’s oh so decadent and easy to make too.
These cookies are chewy, gooey, and are the perfect treat to take to a gathering or just make on a lazy weekend. They are perfect for serving with coffee or dipping in milk. And don’t even get me started on turning them into cookie ice cream sandwiches. 😋

Ingredients to Make Brownie Cookies
First you will need normal cookie ingredients like flour, white sugar, dark brown sugar, butter, baking powder, eggs, salt and vanilla extract.
For the more specialized supplies, you will need dark chocolate. I recommend using around 60% or semi sweet. For superior cookies, I also recommend using a high quality chocolate – Valrhona is my personal favorite. You will also need cocoa powder and if you want to add a few chocolate chips into the cookies, you will want to either leave aside some extra dark chocolate. Or what is even better is to use milk chocolate for the chips. This will add a bit of variety and lighten the already deep, rich chocolatey flavors. This Valrhona Creamy Milk Chocolate is the best!
I have opinions on vanilla extract too! I highly recommend making your own homemade Vanilla Extract or using Penzey’s. If you want something faster or more affordable Adam’s Best is the best.

Kitchen Tools to Make Easy & Gooey Brownie Cookies
To make these Gooey Brownie Cookies you will need a heat safe bowl for melting the chocolate, a stand mixer or electric mixer and baking sheets for your oven.
You’ll use both a microwave and an oven to make these cookies. The microwave is to melt the chocolate and the oven is used to bake the cookies. You can also melt your chocolate using a stovetop – the microwave is just a bit faster.

Tips for Making Your Gooey Brownie Cookies
Make ahead: My least favorite part of this recipe is making the melted dark chocolate and butter to start this cookie. You need to melt it and then bring it back to room temperature so it won’t melt your sugar or cook your eggs when you blend it with the rest of the cookie ingredients. This is really important. So make sure you start this recipe ahead of time!
How Far In Advance Can you Start these Brownie Cookies?
I recommend starting them night before or in the morning if you want to make them in the afternoon. Remember that you are only melting the chocolate and butter – both of which are self stable. Just make sure your blend is thoroughly mixed and safely covered until use.

How to Serve & Store Your Brownie Cookies
Your Brownie Cookies store just like any standard cookie. They are best kept in an air tight container for up to around 7 days. They will last longer than your average cookie – but not by much. As far as how to serve them, that’s completely up to you! Get creative.
I love Brownie Cookies served slightly warm because that’s something you can’t do with regular brownies. So warm with ice cream, frozen yogurt, or milk is classic. You could also pair them with a fun Marshmallow Latte like this.


Easy & Gooey Brownie Cookies Recipe
Equipment
- 1 Large Baking Sheet
- 1 Heat Safe Bowl
- 1 Stand Mixer or Electric Mixer
Ingredients
- 1/2 cup Dark Chocolate
- 1/4 cup Milk Chocolate Chopped, this is optional
- 1/4 cup Butter
- 2 tbsp Dutch Cocoa
- 1 large Egg
- 1/2 cup White Sugar
- 1/4 cup Dark Brown Sugar Light is fine, dark helps for a rich, chewy cookie.
- 1 tsp Vanilla Extract
- 1 tsp Baking Powder
- 1/4 tsp Salt
- 1/2 cup Flour
Instructions
- In a heat safe bowl, combine the dark chocolate and butter. You can use a microwave for 30 second intervals, stirring thoroughly and completely before moving on or you can place the bowl above a fitted stock pot with 1-2 inches of water in the stock pot below. Keep the heat on low and stir the chocolate and butter thoroughly.
- Whichever method you choose, set the chocolate and butter aside once melted. Allow the chocolate and butter to cool to near room temperature so that it doesn't melt the sugar.
- Preheat the oven to 350°F. Line a large baking sheet with parchment paper.
- In a large bowl combine the white sugar, brown sugar, egg and vanilla.
- Use a mixer to beat the mixture on high for 7 minutes allowing the volume and texture to change.
- Gently mix in your chocolate and butter mixture.
- Sprinkle in the cocoa powder, salt, baking powder, and flour. Mix gently only mixing until the ingredients are incorporated.
- Mix in your chopped milk chocolate until evenly incorporated.
- Immediately scoop the dough into approximately 2 tablespoon sized dough balls.
- Bake for 10-12 minutes. Look for crinkly tops to know when they are done.
- Remove the cookies from the oven but leave them on the baking pan for at least 5-10 minutes.
- Optional: While still warm, dust them with a touch of flaky sea salt.
